"(60% chardonnay and 40% pinot noir, 80% from 2007 and 20% each from 2006 and 2005; disgorged June, 2011): Light gold. Deeply pitched aromas of orchard fruits and redcurrant, with a hint of pungent herbs. Dense and chewy on the palate, offering broad pear and bitter cherry flavors braced by tangy acidity. Shows very good clarity and energy on the finish, which leaves a spicy note behind."

2004 Gaston Chiquet Special Club Brut
On Sale $75.99
"The 2004 Brut Special Club bursts from the glass with terrific energy and sheer class. It captures all of the potential of a year that was especially favorable to Chardonnay. There is plenty of nuance and detail in the glass. The 2004 shows off tons of personality and sheer class. Mint, sage and eucalyptus are some of the notes that wrap around the finish. This is first-class all the way. It is also one of the very finest wines I have ever tasted from Chiquet. The 2004 Special Club is 70% Chardonnay (from Dizy), 30% Pinot Noir (from Ay and Hautvillers). Dosage is 8 grams per liter. Disgorged July 2011. Anticipated maturity: 2012-2019."

Orchard fruits, rose and minerals on the nose, with notes of gingerbread and rhubarb that come up with aeration. Sappy and focused on the palate, with very good depth and vivacity to its blood orange and candied floral flavors. Picks up a spicy quality on the back end and finishes with impressive cling and mineral-driven persistence."

H. Billiot Fils Brut Rose Grand Cru
On Sale $62.99
"The NV Brut Rose Grand Cru is a deeply colored, powerful wine that showcases the richness of Ambonnay at its finest. The Rose needs some time in the glass to find its inner balance, but when it does the fruit gains delineation and intensity through to the dramatic, sweeping finish. The NV Brut Rose Grand Cru is predominantly Pinot Noir (including 6% still Pinot) with a dash of Chardonnay from the estate's oldest vineyards." 92 Points The Wine Advocate

Saturday 12.8.12 Tasting

Saturday Tasting:
Barolos & Barbarescos
12 to 4pm
At the Bar

Tomorrow's tasting will feature Barolos and Barbarescos from two producers in Piedmont, Italy, Moccagatta and Luigi Piri. Robert Parker has hailed both labels as producing some of the best wines in Piedmont.

Robert Parker on Luigi Piri:

"This is an impressive set of wines from Giampaolo Pira. The wines aren't as massive as they sometimes are, but that is just fine. I also noted that the use of oak was much more polished than in some recent vintages."

Robert Parker on Moccagatta: "This is one of the strongest sets of wines I can remember from Moccagatta. The entry-level offerings are absolutely delicious and reasonably priced. The Barbareschi are elegant and polished, with less overt oakiness than was once common. Moccaggatta's 2008s are among the best Barbareschi in what has proven to be a highly irregular vintage. Simply put, I can't say enough good things about these wines."
2005 Moccagatta "Bric Balin" Barbaresco
On Sale $49.99
The 2005 Barbaresco Bric Balin is a wine of notable freshness and overall harmony. Sweet red cherries, menthol and spices emerge from this beautifully-balanced, feminine Barbaresco. The oak is particularly well-integrated in this vintage. Anticipated maturity: 2011-2021.
92 Points The Wine Advocate

2008 Moccagatta "Bric Balin" Barbaresco
On Sale $49.99
The 2008 Barbaresco Bric Balin wafts from the glass with crushed flowers, dried cherries, tobacco and cedar. It is less overt than the Basarin, with the structural components playing a greater role in the wine's balance. The energy and focus here are both attractive, while the oak seems to have come down, all of which adds up to a wine with terrific overall balance. The Bric Balin can be enjoyed with minimum cellaring, but it will require some air for the fruit to flesh out. It is a fine effort from the Minuto brothers. Anticipated maturity: 2013-2020.
94 Points The Wine Advocate

2008 Moccagatta "Basarin" Barbaresco
On Sale $49.99
The 2008 Barbaresco Basarin is impeccable from start to finish. Sweet rose petals, dark cherries, spices and mocha are some of the notes that emerge from the Basarin. Constantly changing in the glass, the Basarin is at first quite rich in its fruit, but then turns quite a bit more elegant and ethereal with time in the glass. In 2008 the Basarin impresses for its superb overall harmony and balance. This is a fabulous showing from Moccagatta's entry-level Barbaresco. Anticipated maturity: 2015-2020.
92 Points The Wine Advocate

2008 Luigi Pira "Marenca" Barolo
On Sale $64.99
The 2008 Barolo Vigna Marenca boasts a center of bright red berries that is surprisingly supple and elegant. Sweet red cherries, freshly cut flowers, spices and mint take shape in the glass as the 2008 shows off a refined, high-toned register that is rarely found in this wine. The 2008 boasts striking inner perfume and a long, chalky yet seamless finish that is the essence of harmony. A hint of dried roses and sweet cherries linger in the empty glass. This is another dazzling showing. The Marenca was aged in a combination of cask and tonneaux. Anticipated maturity: 2018-2028.
95 Points The Wine Advocate

2008 Luigi Pira "Margheria" Barolo
On Sale $49.99
Pira's 2008 Barolo Vigna Margheria has developed very nicely since I first tasted it in November, 2011. The typical power and weight of this site comes through, but in 2008 the Margheria has an extra dimension of sexiness that makes it highly appealing. Dark cherries, plums, asphalt, melted road tar, dried rose petals and licorice are some of the many notes that come to life in the glass. The weight and tannic finish is pure Margheria, even if the 2008 isn't quite the bruiser it often is. Pira aged the Margheria in 20-hectoliter casks. This is a terrific showing. Anticipated maturity: 2016-2026.
93 Points The Wine Advocate

2008 Luigi Pira "Vigna Rionda" Barolo
On Sale $89.99
The 2008 Barolo Vigna Rionda possesses striking inner perfume and sweetness as it wraps around the palate. Raspberries, hard candy, flowers, mint and sweet spices are some of the many notes that flow from this effortless, sensual Barolo. Silky tannins are present, but they are nearly covered by the pure sensuality of the fruit. Today the Rionda is supple, sweet and totally inviting. The finish is intense and totally haunting. This is an exceptional, hugely promising Barolo from Giampaolo Pira. Anticipated maturity: 2016-2028.

09 Ogier & Jamet Cote-Roties!

We have two exceptional Cote Roties (Jamet and Ogier) These are perfect additions to a collector's set of French wines. This offer is Wish List only. Please let me know if you would like to reserve any of these bottles. Quantities are limited and the wines are due to arrive in mid- to late November.

2009 Jamet Cote Rotie
Pre-Arrival Price $94.99
There are only about 200 cases of the 2009 Cote Rotie Cote Brune, which sees around 15% new oak. Made in a denser, more muscular, masculine style, it offers abundant notes of creme de cassis, black raspberries, licorice, roasted meats and tobacco leaf. Heady, rich and full-bodied, it should drink well for 10-15+ years.
90-93 points Robert Parker's Wine Advocate

2009 Michel Ogier Cote Rotie
Pre-Arrival Price $94.99
Not surprisingly, the 2009s are softer, more front end-loaded wines. The 2009 Cote Rotie Classique saw about 60-70% new oak casks in this concentrated vintage. It reveals a dense purple color along with a beautiful bouquet of frying lard and bacon, blackberries, raspberries, forest floor and spring flowers. The sweetness of the tannin, the wine's opulent, fleshy mouthfeel and long, layered finish make for a sumptuous Cote Rotie to drink over the next 10-15 years.

Ogier's wines just keep getting better and better, so if you haven't yet jumped on the Ogier bandwagon, it's time to do so. Michel Ogier, and more recently his son, Stephane, are the leading craftsmen in terms of wines from the steep hillsides north of the old Roman town of Vienne. These are still entitled to only a VDP designation, but current vintages are the finest he has yet produced.
94 points Robert Parker's The Wine Advocate

2010 Les Cailloux Châteauneuf-du-Pape Cuvée Centenaire
Pre-Arrival Price $219.99
"Even better and a monumental wine in the making, the profound 2010 Les Cailloux Châteauneuf-du-Pape Cuvée Centenaire (tasted just prior to bottling) smells of a Provencal street market and offers up gorgeous aromas kirsch, raspberry, dried flowers, spice-box, roasted meats, and licorice on the nose. Coming from a single plot of very old Grenache (there is a touch of Mourvedre in the blend) and aged all in tank, this exuberant, hedonistic-bent Châteauneuf-du-Pape is full-bodied on the palate and delivers a voluptuous, mouth filling texture, brilliant concentration, and a blockbuster finish. Eclipsing the ’07 and up there with the ’90 (I think even better), this is monumental stuff that every Châteauneuf-du-Pape lover needs to have in the cellar"

2009 Samsara Syrah Melville Vineyard, Sta. Rita Hills, California
On Sale $39.99
A dazzling wine, the 2009 Syrah Melville bursts from the glass with black cherries, pepper, mint, violets and spices. It possesses striking varietal nuance and tons of character in an exuberant, flashy style I find highly appealing. Waves of fruit saturate the palate on a rich, creamy finish buffered by cooling veins of minerality. This is a wonderfully complete, harmonious wine from Samsara. The Melville is 100% Syrah, Estrella clone, fermented with 50% whole clusters and aged in French oak barrels, 25% new. Anticipated maturity: 2014-2019.
94 Points The Wine Advocate

2010 Bodegas Ordonez Zerran, Montsant, Spain
On Sale $14.99
50% Garnacha, 40% Mazuelo, 10% Syrah. Bright violet color. Aromas of cherry, redcurrant, and potpourri, with a mineral topnote. Spicy cherry and earth flavors show a sexy floral nuance, strong minerality and very good focus. Finishes on a bitter cherry note, with strong cut and lingering spiciness.
90 Points Stephen Tanzer

2009 Bethel Heights Vineyard Pinot Noir, Willamette Valley, Oregon
On Sale $23.99
Polished, light and immensely appealing for its pretty raspberry, cream, and floral aromas and flavors, lingering easily on the sleek finish. Drink now through 2015. 5,100 cases made.
90 Points Wine Spectator

2011 Bedrock Old Vines Zinfandel, Sonoma Valley, California
On Sale $26.99
If there is any wine of the 2011 releases that accurately demonstrates the poised, claret-like, character of the 2011 vintage it is the 2011 Sonoma Valley Old-Vine. The late ripening Stellwagen Vineyard once again was included into this cuvee to lend its dark fruit, and Casa Santinamaria, another vineyard originally slated for vineyard designation, was included for its beautiful spice.
-Winemaker's Notes

2010 Samuel Billaud Chablis "Les Grands Terroirs"
On Sale $24.99
The 2010 Chablis is all about crystalline purity, depth and nuance. Lemon, white flowers, slate and crushed rocks all meld together in the glass. The 2010 impresses for its fabulous balance and impeccable finish. This a striking wine within its peer group. Anticipated maturity: 2012+.
90 Points The Wine Advocate

Fruit source 100% from Sangiacomo Family Vineyards the same vineyards used by Rombauer, and winemaker Richard Litsch whom previously was working at Romabuer! On the nose rich tones of honeysuckle, pear, coconut, and vanilla. On the palate tropical notes backed with lively acidity. A beautiful creamy vanilla-oak finish!
-Winemaker's Notes

2011 Domaine Boisson Cairanne Villages, Cotes du Rhone
On Sale $17.99
Harmonious and with a fine, tight finish, this wine offers a rich and generous flavour - a typical white from the South.

Burgundy is France's most terroir-focused region, with strict rules on bottle labeling according to soil and climactic conditions. This is a chance to taste great Burgundy from three of the region's best value appellations.

2011 Henri Perrusset Mâcon-Villages Chardonnay, Bourgogne, France
On Sale $16.99
The Mâcon-Villages is a custom blend of all Perrusset's holdings around Farges. This is a Chardonnay with the ripeness and intensity level of a Pouilly-Fuissé or even a Saint-Aubin, with the particular goût de terroir of Henri's corner of Mâcon.
-Winemaker's Notes

2011 Domaine Perraud Mâcon-Villages, Maconnais, France
On Sale $16.99
Zip and zest and a deliriously saturated mouthful of pure citrus and white fruit-this lively, diamond-cut white Burgundy is for us not only an amazing value in white Burgundy but also it is a stunning example of how character-driven and and cut whites from the Maconnais are.
-Winemaker's Notes

2010 Samuel Billaud Chablis
On Sale $24.99
The 2010 Chablis is all about crystalline purity, depth and nuance. Lemon, white flowers, slate and crushed rocks all meld together in the glass. The 2010 impresses for its fabulous balance and impeccable finish. This a striking wine within its peer group. Anticipated maturity: 2012+.

2010 Billaud Simon Chablis 1er Cru Montee de Tonnerre
On Sale $49.99
White peaches, pears, minerals and oyster shells all make an appearance in this savory, delicate wine of impeccable class and pure breeding. This is a great example of Montee de Tonnerre. Anticipated maturity: 2015+.
94 Points The Wine Advocate

2010 Billaud Simon Chablis 1er Cru Mont de Milieu
On Sale $44.99
Things take a more serious turn with the 2010 Chablis Mont de Milieu, which is a major step up from the preceding premier crus. Fruit, structure and acidity are all deftly balanced in this harmonious, impeccable wine. I especially like the level of nuance and pure delineation in the glass. A round, textured finish rounds things out in style. Here again, the seemingly opposite, contradictory qualities of the vintage are both on display. The Mont de Milieu is at once approachable yet taut. I find the combination utterly irresistible. Anticipated maturity: 2013+.
93 Points The Wine Advocate

2010 Burgaud Morgon Cote de Py
On Sale $19.99
Bright purple. Pungent aromas of dark berry skin, cherry compote, licorice and minerals, with subtle spiciness adding lift. Firm and chewy on entry, then fleshier in the middle, offering bitter cherry and licorice pastille flavors braced by juicy acidity. Shows a promising blend of rich fruit and structure and finishes with very good energy and lingering minerality.

2009 Passot les Rampaux Fleurie Vieilles Vignes

Dark purple. Red and dark berry preserve aromas are complemented by notes of sassafras, violet and spicecake. Black raspberry and bitter cherry flavors stain the palate, picking up a spicy quality with air along with a note of candied flowers. It's time again for our annual "farmer fizz" Champagne campaign! We are the biggest fans of these rare, brilliant handmade sparklers. We only get the chance to buy them ONCE A YEAR.....that's it! So don't miss this chance to taste, hoard and collect some of the greatest sparkling wines ever made.

Here's what we'll be pouring:
NV Pierre Gimonnet Blanc de Blancs Cuis 1er Cru Brut

NV Mousse "Or Tradition" Brut
On Sale $42.99
We love this nonvintage champagne from a new producer, Mousse Fils. This basic NV is 80% Pinot Meunier and 20% Pinot Noir, disgorged late December 2011. This is the best edition of the cuvee so far. It's chunky and unassuming but flavory, round, and dark-bready. Not complex, but hugely enjoyable.

NV Chartogne-Taillet Cuvee Sainte-Anne Brut
On Sale $42.99
(60% chardonnay and 40% pinot noir, 80% from 2007 and 20% each from 2006 and 2005; disgorged June, 2011): Light gold. Deeply pitched aromas of orchard fruits and redcurrant, with a hint of pungent herbs. Dense and chewy on the palate, offering broad pear and bitter cherry flavors braced by tangy acidity. 2006 Pierre Peters "Cuvee Millesimee L'Esprit de 2006"
On Sale $74.99
The 2006 Brut "Cuvee Millesime L'Esprit de 2006" is a blend of fruit from parcels in Mesnil, Oger, Avize and Cramant, all four Grand Cru villages. It is a sensational wine laced with green pears, apples, lemon, white flowers and spices. The balance of ripeness and tautness is remarkable in this powerful, intense wine. I tasted the 2006 for the first time during a visit to the winery about a year and a half ago, and immediately purchased a case of magnums. The wine is every bit as remarkable today. Dosage is 5.3 grams per liter. Disgorged January 2011. Anticipated maturity: 2012-2026.

A blend of 70% Grenache, 20% Mourvedre, and 10% Syrah (with only the Syrah being aged in smaller, new barrels), it has put on weight since I tasted it last year and offers up a spectacular array of spiced red fruits, garrigue, small flowers, licorice, and toast on the nose to go with a full-bodied, layered and perfectly proportioned mouth feel. This complex, seamless, and rich Châteauneuf-du-Pape will age effortlessly for two decades!"

Available 2010 Chateauneufs-du-Papes

2010 Cuvee du Vatican Chateauneuf-du-Pape "Chateau Sixtine"
On Sale $53.99 750 ml
In need of 4-5 years of cellaring, the infantile 2010 Chateauneuf du Pape Reserve Sixtine is a behemoth. Made from a blend similar to the 2009's, the 2010 exhibits an opaque purple color in addition to a beautiful nose of melted licorice, blackberries, cassis, smoky barbecue embers, underbrush and soil overtones. Rich and full-bodied with a multilayered mouthfeel, this impressive, pure, well-built Chateauneuf will require patience. Anticipated maturity: 2020-2035.
93-95 Points, Robert Parker
2010 Domaine Charbonniere Chateauneuf-du-Pape "Mourre des Perdrix"
On Sale $53.99 750 ml"A big step up and the best vintage of this cuvee I’ve tasted to date, the 2010 Domaine de la Charbonnière Châteauneuf-du-Pape Cuvée Mourre des Perdrix is a knockout effort! A blend of 69% Grenache, 15% Syrah, 15% Mourvedre, and 1% Cinsault that is aged in wooden tanks, it boasts a decidedly mineral-driven bouquet of sweet cherries, kirsch liqueur, rolled stones, garrigue, and spice-box that has both complexity and intensity. This full-bodied, powerful, yet elegant wine has a gorgeous texture, excellent acidity, and very fine tannin that emerge on, and frame, the finish. Classically proportioned, with a traditional feel, this brilliant 2010 will drink well for 15-20 years."
95 Points, the Rhone Report
2010 Bosquet des Papes Chateauneuf-du-Pape "Le Chante le Merle Vieille Vignes"
On Sale $65.99 750 ml
"Even more extraordinary is the compelling 2010 Chateauneuf du Pape Chante Le Merle. Inky bluish/purple, the wine offers up notes of incense, camphor, blueberry, blackberry and black raspberry liqueur followed by an exciting, full-bodied, multi-dimensional mouthfeel and finish of close to a minute. This is stunningly rich and pure, yet has remarkable delineation, and because of the acid profile of this vintage, it seems light on its feet despite what I’m sure is 15%-plus alcohol. This wine should evolve over a two decade span and be completely drinkable over that entire period. "
94-96 Points, Robert Parker

2010 Olivier Hillaire Chateauneuf-du-Pape "Les Petits Pieds d'Armand"
On Sale $85.99 750 ml
"One of my favorite wines and a blockbuster in the vintage, the 100% old vine Grenache 2010 Les Petits Pieds d'Armand comes all from the famed La Crau lieu-dit and vines planted in 1899. Offering up a totally brilliant bouquet of kirsch liqueur, creamy raspberry, licorice, and the essence of mixed garrigue and crushed flowers, this full-bodied, powerful, and decadent Châteauneuf-du-Pape is exceedingly concentrated, textured, and rich. Even better than the ’07 and hanging onto plenty of freshness and elegance, this full throttle Grenache should be given 5-6 years of bottle age, and then enjoyed over the following decade or more. "

2008 Forman Cabernet Sauvignon, Napa Valley

Good deep ruby-red.  Cool aromas of blueberry, menthol and flowers; smells delicate.  Then surprisingly creamy, round and sweet in the mouth, with a faint herbal edge giving shape and verve to the redcurrant and plum fruit.  Lovely pliant wine in a rather easygoing style, finishing with smooth tannins.  This should be approachable young and age well on its balance.

2009 Chateau Rieussec, Sauternes
On Sale $119.99

The minerality and stoniness really comes through on the nose of this Rieussec, more than the 2007. The palate is very well balanced with superb acidity, real tension, steely with great precision with notes of apricot, white peach and honey on the beautifully defined finish. Probably the best Rieussec since the astounding 2001.

2009 Chateau Lynch-Bages, Pauillac
On Sale $249.99

Performing even better from bottle than it did from barrel, this appears to be the finest Lynch Bages since the 2000, 1990 and 1989. According to the chateau, the 2009 has the highest level of polyphenols ever measured as well as high alcohol (nearly 13.5%). A blend of 75% Cabernet Sauvignon and the rest largely Merlot with touches of Cabernet Franc and Petit Verdot, it is an expressive, voluptuously textured effort with unctuosity and powerful, juicy, succulent blackberry and black currant flavors, low acids, a layered, massive mouthfeel, but no sense of heaviness or fatigue. This exquisite Lynch Bages should drink well for 30+ years.

Call 314.863.6282 for reservations

Join us as we welcome Anthony Wills, founder and managing director of the Kilchoman Distillery Co Ltd,  the first distillery to be established on Islay in over 124 years.  He ran his own independent single cask bottling company for 8 years when he came up with the idea of building a farm distillery. The distillery was built in 2005, with the first run of new spirit coming off the stills later that year. Kilchoman is one of the smallest distilleries in Scotland with an annual production of approximately 100,000 litres of alcohol. We at the Merch have been big fans of their malts, so much so that we have purchased casks in previous years and they bottled it for us at cask strength. Our old friend, Ed Kohl from Impex Beverages and importer of Kilchoman, will also be here to pour expressions from the Arran Distillery, located on the Isle of Arran.

Legends from Europe Series #1

Parmigiano Reggiano®
Handmade. Seasonal subtleties.
Three ingredients. Quality focused.
Authentically European.

HAND MADE IN A SPECIAL PLACE
Parmigiano Reggiano® cheese is made one wheel at a time
by cheese makers dedicated to their craft. Nine centuries of
collective wisdom, combined with exceptional milk from the
cheese-making zone, result in a world-famous food produced
exclusively in five northern Italian provinces, Parma, Reggio-
Emilia, Modena and parts of Mantua and Bologna. Here,
the climate, soil and natural flora encourage the growth of
high-quality grasses essential to the diet of the cows that
produce the nutrient-dense milk used in Parmigiano Reggiano.

SEASONAL CYCLE
Linked intimately to its place of origin, Parmigiano Reggiano
is noted for flavors that reflect the seasons and what the cows
are eating. Spring cheeses, produced when pastures are filled
with wildflowers, fill the mouth with complex herbal and bright
milky sensations. In summer, newly formed wheels “sweat off”
butterfat in their ambient-temperature aging rooms, resulting
in cheeses that are drier and full of flavor — perfect for grating.
Fall cheeses have a higher protein content, making them
especially suitable for long aging and bringing out nutty,
caramelized and buttery flavors. The cows’ dry hay diet in
winter produces Parmigiano Reggiano that carries tropical
fruit aromas.

JUST THREE INGREDIENTS
Every wheel of Parmigiano Reggiano combines raw, partially
skimmed milk from the evening milking with the following
morning’s whole milk. Once natural whey starter and rennet
are added, the resulting curd is broken by a long-handled whisk
into fragments the size of wheat grains. After cooking, the mass
is divided into “twins” that are drained and packed in molds.
Attached to each is a special casein plaque with a data matrix
providing complete traceability. A stamp wrapped around the
new wheel impresses it with distinctive pin-dot certification
marks spelling out the words “Parmigiano Reggiano.” Later,
the wheels are slipped into tanks filled with sea salt and water,
which flavor the cheese and set the rind. Nothing could be
simpler or more natural than this cheese, made without
additives or preservatives and with just three ingredients —
milk, salt, rennet.

EARNING CREDENTIALS FOR QUALITY
Production and certification processes follow standards set by
Italian law and enforced by Italy’s oldest producers’ association,
the Consorzio del Formaggio Parmigiano-Reggiano, established
in 1934. Experts test each wheel after one year and those
that pass their rigorous inspection are fire branded with the
prestigious oval “Consorzio Tutela Parmigiano Reggiano”
certification mark. The wheels return to the aging houses where
the vast majority are aged to a full 24 months of maturity, or
even longer. Cheeses judged exceptional receive the “Export”
or “Extra” firebrand. In addition to these marks of quality, the
European Union long ago designated Parmigiano Reggiano as a
Protected Designation of Origin (PDO) product.

LIFELONG NUTRITION SOURCE
Parmigiano Reggiano is recommended by many Italian
pediatricians as a “first food” for babies: a lactose-free, easily
digestible and tasty source of protein and vitamins. The cheese’s
rich calcium content benefits growing children by building
strong bones and helps adults (especially women) minimize
bone loss as they age. That’s why Parmigiano Reggiano is
orbiting the earth as part of the International Space Station
crew’s official diet; 100 grams daily helps prevent bone loss.
Athletes depend on a chunk of Parmigiano Reggiano for a quick
and satisfying energy boost — and, for the same reason, it’s
an ideal between-meal snack for anyone. Grated, Parmigiano
Reggiano not only lends savory flavor to pastas, pizzas, sauces
and other dishes, but is also a superb table cheese.   •

"Dry Cured Salame"

It Means: Fermented pork processed through a traditional hang-drying technique. Salt, seasonings and other ingredients are added to preserve the meat and it is aged three weeks to six months, depending on the size and type of the salame. Dry curing imparts an intense flavor and rich color, and some dry cured meats are also smoked for additional flavor.

We have loved Columbus for there cured meats for years now. We are getting in a new large format HOT Sopressata to go along with their Finocchiona and Sopressata.  Come by after Wednesday for a taste!

The vintage is ideally suited to Chardonnay, and Gimonnet seems to have captured the full potential of the year here. This is a dazzling effort. The 2004 can be enjoyed today, but ideally needs more time in bottle. It is deeply impressive. NV Jean Milan Millenaire Brut Pre-Arrival Price $54.99
This is both slightly more elegant and a bit more complex as well with more developed aromas that are similar but there are more brioche and spice characters that can also be found on the very effervescent flavors, indeed this is downright foamy yet the effervescence is very fine and not at all aggressive, which allows the finish to display a sappy and mouth coating quality. This is both intense and quite long as the finish almost sneaks up on the taster. Terrific.

NV Henri Goutorbe Rose' Brut Pre-Arrival Price $54.99
The NV Brut Rose Grand Cru, a specialty here, is once again terrific. Though somewhat reticent and tightly wound, the Rose shows hints of its inner sweetness and gorgeous perfume the longer it sits in the glass. This vinous yet mid-weight, classy wine is a great effort from Goutorbe, even if it isn't as extroverted as some past versions. The Rose Grand Cru is 75% Pinot Noir and 25% Chardonnay, all from Ay. Given that the wine is 100% 2006 juice I would like to think there is room for this wine to improve with further time in bottle. Disgorged May 4, 2010. Anticipated maturity: 2012-2016. Goutorbe is one of my favorite small, artisan estates. The majority of Goutorbe’s 22 hectares of vineyards are in his home town of Ay, with additional parcels scattered throughout Mareuil, Hautvillers, Mutigny and Bisseuil, and the southern districts of Sezanne and the Aube. The wines are loaded with personality, and I can’t recommend them highly enough.Rated 91/100 points The Wine Advocate

(disgorged January, 2010) Yellow-gold. Wild, mineral-driven bouquet of orange zest, pear, lemongrass and chamomile, with a strong note of iodine picking up steam with air. Deeply pitched, potent orchard fruit and mineral flavors stain the palate, with salty minerality providing lift.
