"A blend of 50% Grenache, 35% Mourvedre, 10% Syrah, and 5% Carignan aged in concrete except for the Mourvedre (which was aged in barrel), the 2007 Cotes du Rhone-Villages Cairanne Cuvee Maximilien is another stunning effort. More blueberry, truffle, tree bark, and sauteed porcini mushrooms intermixed with notes of spring flowers and damp earth soar from the glass of this dark ruby/purple-tinged wine. Fabulous intensity and texture as well as a full-bodied mouthfeel, but no hard edges (despite the fact that approximately one-third of the wine is made from Mourvedre), it exhibits terrific fruit as well as noble sweetness and sucrosite (the wine is totally dry). It's called Clos Galena and this stunning blend (a really cool, funky blend...) from the 2005 vintage received a rave review from The Wine Advocate. Put it in the fridge for an hour before serving. Just a little bit longer than our Half Hour Rule. This will get the wine very close to a subterranean wine cellar temperature. Around 55º F. 2008 Claverach Vineyard Green "Ozark Mountain"

"This dry white wine is made from an interesting blend of Seyval Blanc and Marsanne grapes. Seyval is a hybrid of European and American grapes that's been crossed for aroma and flavor in the bottle and hardiness and vigor in the vineyard. Our local weather can be tough and this varietal has stood the test of time. Marsanne is a white wine grape responsible for some of the luscious and intense white wines from France's Rhone Valley . At Claverach they call this blend 'Green.' We love the nose. It's fresh and shows off our abundant Summer warmth and sunshine with it's ripe pear and white peach notes. There's a touch of citrus there too. It's a bit sneaky on the palate. Don't serve it too chilled or the flavors will elude you. There's a snap of fresh acidity in the finish that we love too. There's more than moonshine brewing in the Ozark Mountains..."

2006 Claverach Vineyard Chambourcin "Ozark Mountain"

"Chambourcin is a hybrid grape of unknown parentage, probably a European and North American mix. Chamboucin is hardy and can withstand our drastic change in seasons and seems to thrive in the poor, rocky soil of the Ozark Mountain AVA. In the glass the wine shows a nice mix of deep red and dark purple. The nose is mixed too with a combination of red and black fruits along with spice and mineral notes in the background. It's dry with ripe fruit and it's subtle on the palate so make sure that you serve it slightly cool, say, 60ºF. Use our Half Hour Rule (30 minutes in your fridge) if you don't have a subterranean wine cellar or wine storage unit. Some people compare Chambourcin to Pinot Noir but we think that it's more like a theoretical blend of a Rhone Valley red and a Spanish Rioja. The finish is silky with round tannins. Serve it with grilled red meats or a bold cheese like the outstanding, locally-produced Goatsbeard Osage Orange. This is a delicious washed rind cheese that's perfect with Claverach's Chambourcin."

Gruyere "Cave Aged"
Cut and Wrapped Fresh to Your Order !!!
This cave aged version of Swiss Gruyere is a fantastic cheese. This cheese is aged to perfection in underground caves and has a firm texture with complex flavors that show hints of fruit, nuts and a unique earthiness. It's an excellent grating/melting cheese and is one of the traditional "fondue" cheeses. It's great with big red wines too. One of our biggest sellers and sure to please. Mimolette

Cut and Wrapped Fresh to Your Order !!!
Mimolette is a most unusual cheese, spherical like an Edam but with a rough moon-like surface and a bright orange interior. It resembles a melon when cut open. The cheese originated in Holland and is made in a similar way to Edam. It is believed to have been introduced to France when Flanders was a part of that country. Some believe that in the 17th century the French minister Colbert forbade the importation of foreign goods, including cheese, and so the French began making it for themselves. It is now made in Flanders and also in other parts of France, particularly Brittany. The name Mimolette derives from 'mi-mou' meaning 'half-soft'. Maturing the cheeses involves storing them in damp cellars and turning them every week. At the same time the surface of the cheese is brushed to remove cheese mites which feast on its surface. As the cheese ages, evidence of mites can be seen in the pitted and moon like surface which appears on the cheese. Our Mimolette is aged for two years giving it the best combination of flavor and texture. It's firm with a very nutty flavor and a thick, brown-grey crust. Mimolette is excellent on the cheese board but can also be used in canapés and for grating. Stop by for a FREE sample...
New Releases: Importer Kermit Lynch
Kermit Lynch was born and raised in California. From his youth he remembers that his father and uncle worked for a winery, but he has no memory of anyone in his family drinking wine. The Lynch family was rich in preachers, too, but at communion they served Welch's grape juice, even though, as Kermit points out, Jesus turned water into wine, not into grape juice.

In 1972 he opened a retail wine shop and later began importing and distributing nationally. In 2000 he was named Wine Professional of the Year by the James Beard Foundation, in 1998 the French government presented him a medal and named him Chevalier de l'Ordre de Mérite Agricole, and in 2005 he received the Chevalier de la Légion d'Honneur. His book Adventures on the Wine Route, won the Veuve Clicquot Wine Book of the Year award.
