Cheese, We Do It Right

Full Service, Award-Winning Cheese Department
"Our approach to cheese is a simple one and it's the same approach used when it comes to selecting wine for our stores. We taste before we select and try to get to know the producer and importer. We also chose early on, to cut all of our cheeses "fresh to order." This means that we personally and professionally cut and wrap the cheese fresh from the wheel, which gives you a longer shelf life at home and allows you to purchase the exact amount that you desire. And of course we offer samples of our cheeses so that you may see the character of each cheese. Stop by and see why the Riverfront Times calls us the "Best Place to Buy Cheese" and "Best Cheese Counter" and Sauce Magazine says "Favorite Cheese Case..." -John Nash, The Wine Merchant, Ltd.

Gruyere "Cave Aged"
Cut and Wrapped Fresh to Your Order !!!
This cave aged version of Swiss Gruyere is a fantastic cheese. This cheese is aged to perfection in underground caves and has a firm texture with complex flavors that show hints of fruit, nuts and a unique earthiness. It's an excellent grating/melting cheese and is one of the traditional "fondue" cheeses. It's great with big red wines too. One of our biggest sellers and sure to please. Mimolette

Cut and Wrapped Fresh to Your Order !!!
Mimolette is a most unusual cheese, spherical like an Edam but with a rough moon-like surface and a bright orange interior. It resembles a melon when cut open. The cheese originated in Holland and is made in a similar way to Edam. It is believed to have been introduced to France when Flanders was a part of that country. Some believe that in the 17th century the French minister Colbert forbade the importation of foreign goods, including cheese, and so the French began making it for themselves. It is now made in Flanders and also in other parts of France, particularly Brittany. The name Mimolette derives from 'mi-mou' meaning 'half-soft'. Maturing the cheeses involves storing them in damp cellars and turning them every week. At the same time the surface of the cheese is brushed to remove cheese mites which feast on its surface. As the cheese ages, evidence of mites can be seen in the pitted and moon like surface which appears on the cheese. Our Mimolette is aged for two years giving it the best combination of flavor and texture. It's firm with a very nutty flavor and a thick, brown-grey crust. Mimolette is excellent on the cheese board but can also be used in canapés and for grating. Stop by for a FREE sample...
