Its deep ruby color is accompanied by a superb nose of nori seaweed wrappers, licorice, pepper, tobacco leaf, and gobs of sweet black cherry and black curr
ant fruit. Full-bodied with a fabulous texture, purity, and freshness (a consistent hallmark of this vintage), a juicy, rich, layered mouthfeel, and a finish that lasts for 45+ seconds. Although young, the tannin, acidity, and alcohol are all well-integrated. Typically, this wine tends to be dormant for 3-5 years after bottling, then emerge brilliantly. Therefore, I would wait until 2012 before pulling a cork on this one. Drink it over the following 20-25 years."

7 Chateauneuf du Pape had not been assembled at the time of my visit, so I had the privilege of tasting all the different component parts. My ratings were (91-93) for the Cinsault, (92-94) for the Counoise, (93-95) for the Grenache, (90-93) for the Syrah, and (94-96) for the Mourvedre. The Mourvedre and Grenache represent 65% of the final blend, so I tend to think this wine will fall within the (93-95+) range. Even though Beaucastel rarely uses as much Grenache as the other famous Chateauneuf du Pape producers, their 2007 is very much in keeping with the vintage. It exhibits beautiful freshness, superb maturity, great fragrance, full-bodied power, and more seamlessness than the 2006. This may be their greatest vintage of Beaucastel since 2001 and 1998. It should age effortlessly for a minimum of two decades."-Rated 93-95+/100 Robert Parker, The Wine Advocate

"This delicious cheese takes its name from the town of Manchester in Vermont. It's produced by Consider Bardwell Farm and is aged and distributed by Jasper Hill Farm. Jasper Hill has branched out and in addition to their own production they now age and distribute cheeses from other small Vermont producers. Kind of like Neal's Yard Dairy in London. Manchester is a raw-milk goat cheese that fools most tasters. It's missing most of the funky, goaty tang that keeps many people away from goat cheese. The Consider Bardwell Farm in western Vermont makes the cheese from the milk of pasture-raised goats and then ages the 3 pound tommes (wheels) in Jasper Hill Farm's subterranean aging cave. It's really a complex cheese, delightful to smell and a joy to eat. Serve with with a crisp Sauvignon Blanc from France's Loire Valley like Portier's Quincy or Sancerre from Domaine Thomas."

"I've been a fan of Forman Cabernet since the 1980s. Ric Forman was the original winemaker at Sterling Vineyards in Napa when Peter Newton (also Newton Vineyards in Napa) owned it in the 1970s. Coca-Cola now owns Sterling and the wines have an industrial feel and have become a flavorless brand wine in my opinion... When Forman was making wine at Sterling Vineyards the wines were a hot item. Ric now makes a small amount under his own label from vineyards on Howell Mountain in Napa. His wines seem almost like a cross between a lush St. Emilion from Bordeaux and a classic Napa Cab. I've loved his work for years and his track record is impeccable with lots of big scores from the critics. His prices have remained reasonable especially when you consider the number of $100+ wines from startup Napa producers without a proven track record. Always great juice from Ric Forman. The newly-released 2006 Cab arrives at the end of this week and has received a rave review from wine critic Robert Parker. Order early and save!"
