We also chose early on, to cut all of our cheeses "fresh to order." This means that we personally and professionally cut and wrap the cheese fresh from the wheel, which gives you a longer shelf life at home and allows you to purchase the exact amount that you desire. And of course we offer samples of our cheeses so that you may see the character of each cheese. Brie de Meaux AOC

"We have several wheels of Brie de Meaux that have just arrived. This is one of the rare name-controlled examples of Brie. Not that industrially-produced junk that Big Box stores try to peddle. This is real brie. Our current wheels are perfectly ripe and oozing with decadent flavor. The p?t? is compact and even textured. Its color is pale yellow, reminiscent of straw and the rind looks like white velvet. The flavors are complex, rich and layered with notes of custard, mushrooms and toasted nuts. In 1980 Brie de Meaux was granted its own AOC status. Just like a fine Margaux from Bordeaux! Stop by for a free sample."
