We love this decadent, handmade, triple cream cheese from Thurman New York. Some of the complexity comes from the combination of excellent, naturally produced raw materials. We're talking about milk and for Kunik it's a perfectly balanced blend of goat and cow milk. The cow portion comes from Jersey Cows which produce a rich milk that's ideal for butter and cheese making. Kunik is sort of like French Brie or Camembert but with extra creamy, silkiness. Kunik is so creamy that one customer said that the texture was like ice cream! We just love room temperature Kunik slathered on a slice of baguette or a crispy toast point. Tip: take your cheese out of the refrigerator at least an hour before serving, two hours is even better. Cheese is at its best when served at room temp. We think that Kunik is the ultimate cheese for Champagne (Cava and Prosecco too) and will stand up to the biggest red wine in your stash of chewy, stain-your-teeth-purple bottles. Kunik has developed quite a following here at the Merch and has been featured recently on the menu at several local restaurants including Niche in Soulard (Chef Gerard Kraft's dining hotspot).
