Neal's Yard Dairy Cornish Yarg

Rich & Crumbly!


Cornish Yarg is a relatively new cheese but made from a recipe from the 13th century. It's crumbly texture and slightly acidic flavor balanced by a creamy mouthfeel is reminiscent of younger cheddars from the region. This version by Allan and Jenny Gray is made exclusively for Neal's Yard Dairy with a traditional rennet and dry salted by hand instead of a dip in brine. The nettle leaves pressed into Cornish Yarg gives the cheese a very distinctive appearance to compliment the unusual name which is an inversion of "Gray", name of the proud parents! Chardonnay (we love it with a fruity Macon-Villages from Burgundy) brings out the best in this cheese. Stop by for a FREE sample.

Washed Rind Beauty!

Everybody loves a stinker! NYD Ardrahan is a washed rind (aromatic baby...) cheese made by the Burns family in County Cork, Ireland using pasteurised cows milk cheese and vegetarian rennet. It's lively aroma grabs your attention which leads to its lovely washed rind. We love the rind's color - kinda looks like the surface of Mars. Inside it's creamy, gooey and rich with a sort of smoked bacon-meaty note in the finish. An Irish classic and a new Merch favorite. Stop by for a FREE sample.
